Healthy Eating Recipe Cashew-Coconut Shrimp Stir Fry
CASHEW-COCONUT SHRIMP STIR FRY
Saute 2 minced garlic cloves in 1 tsp peanut oil over medium heat for 1 minute. Add 2 cups of frozen stir fry veggies, cook for 5 minutes. Add 12 medium precooked frozen shrimp, 1/2 cup precooked microwavable brown rice and 1/3 cup light coconut milk (find it in the international aisle at the grocery store). Saute for 5-8 minutes more. Top with 1 tbs chopped cashews and 1/4 tsp light soy sauce.
400 calories -for one person
**This actually made enough for 2 people
