Super Duper Mexican Style Recipe: Tex Mex Skillet (Takes only 20 minutes to make)

This recipe takes 20 minutes total to make and is completely yummy. My kids even really enjoyed it. I made the meat mixture and then wrapped it up burrito style in wheat tortillas and mmm-good (especially if you enjoy Mexican food)

8 ounces ground pork (we used ground turkey)
4 ounces chorizo (find it in most grocery stores in the meat section)
1 10 ounce can diced tomatoes and green chilies, undrained (international section)
1 cup frozen whole kernel corn
3/4 cup water
1/2 cup chopped red sweet pepper
1 cup uncooked instant rice (I used Uncle Bens brown rice in a bag)
1/2 cup shredded Monterey Jack Cheese (I used Mexican blend Cheese-Monterey Jack and Cheddar combined)
Wheat or Flour tortillas

1. In a large skillet cook pork and sausage until meat is brown. Drain off fat. Stir in undrained tomatoes and chilies, corn, water, and sweet pepper. Bring to a boil.

2. Stir in uncooked rice into mixture in skillet. Remove skillet from heat. Top with cheese. Cover and let stand about 5 minutes or until rice is tender. If desired, serve in flour tortillas.
